LANSING, Ill. (July 29, 2022) – This week The Lansing Journal had the difficult assignment of finding out how local ice cream parlor Gayety’s makes their popular Gayety Special — a sundae consisting of homemade vanilla, strawberry, and banana ice cream topped with fruit salad and homemade whipped cream. We learned that homemade banana ice cream is somewhat unique to Gayety’s, possibly because many small shops find it difficult to time the storage and use of bananas so that they are ripening as they are needed for the ice cream. Gayety’s manages to do that, and their homemade banana ice cream is not only an important ingredient in their Gayety Special, but also a popular standalone flavor.
